  • 3 servings Beyond Meat Chicken Strips Southwest Style, shredded
  • 5 6-inch corn tortillas
  • 1/2 c enchilada sauce
  • 1 c Daiya Shreds
  • 1/4 c black olives


  • Pre-heat oven to 325° F
  • In a small glass dish (approx. 7" X 5") cover the bottom with enchilada sauce
  • Cover with a layer of tortillas (you may need to tear tortillas to make them fit)
  • Add about 1/2 of the Beyond Meat, 1/2 of vegan cheese and 1/2 olives.
  • Repeat layers: tortillas, Beyond Meat, cheese, sauce and olives.
  • Bake at 325° F until cheese is melted and sauce bubbles - about 15-20 minutes.
